Blue (Red) Velvet Cake

Red velvet cake is always delicious, but I decided to switch it up a little bit and dyed it blue. It has the same great flavor with a twist in color.

This recipe makes TWO cakes.

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon fine salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk
2 large eggs at room temperature
2 tablespoons blue food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

Cream Cheese Frosting Ingredients
1 pound cream cheese, softened
4 cups sifted confectioners’ sugar
2 sticks unsalted butter (1 cup), softened
1 teaspoon vanilla extract

1. Preheat the oven to 350 and grease your pans.
2. In a large bowl, sift together the dry ingredients (flour, sugar, baking soda, salt, and cocoa powder.)
3. Whisk the remaining ingredients together in a mixer until blended.
4. Mix in the dry ingredients and mix until the batter is smooth.
5. Pour evenly into pans and cook for 30 minutes, rotating the pans midway through cooking.
6. While the cakes are cooking mix the ingredients for the frosting.

Final Thoughts

This cake is moist and fluffy. What is especially nice about the recipe is that it makes two cakes. So, you can either stack them together to make a layered cake, or have one to take to a party and one to keep for yourself.
