Crock Pot Pork Roast

It is getting chilly outside in the northern hemisphere and nice hearty meals are good to have on those cold nights. They can warm you up and sometimes give you a pick me up. But, sadly, people don’t always have the time to prep a meal. That is were the amazing invention of the crock pot comes in! You can prep it and let it be.

2.5 – 3lb. boneless pork loin roast
2 large garlic cloves, minced
1 large onion, diced
3/4 cup water & 3 beef bouillon cubes
4 -5 potatoes, cubed
3 -4 celery sticks, diced
3 – 3 full size carrots, diced

1. Make slits in the roast and insert the minced garlic then place the pork roast in crock pot.
2. Combine bouillon cubes, water, and onions in crock with roast.
3. Cook on low for about 8 hours. Add vegetables to roast and cook until soft and roast easily pulls apart.

*optional ingredients: I tend to add parsley, and salt to the mixture before cooking for 8 hours. I spice it to taste.

Final Thoughts

This is a very hearty roast and one bowl can tend to fill you up. It is also very wonderful with saltine crackers. And if you are not a fan of pork it is wonderful with beef as well. So, enjoy, and nom it up on those chilly days.
