Pumpkin Chili

2lb of ground turkey
1/2 cup chopped onion
3 cloves minced garlic
2 tsp chili powder
2 tsp cumin
1 tsp oregano
1 tsp parsley
2 15 oz cans of navy beans, rinsed
15 oz can of pumpkin puree NOT pumpkin pie filling
4.5 oz can of chopped green chilies (this come in mild or hot)
2 cups low sodium chicken broth

1. Chop the onion and garlic and saute them in oil or butter. Brown the turkey meat and put meat, onion, and garlic into the chili pot.
2. Put the remaining ingredients into the pot and cook on medium for a hour, stirring occasionally.
3. Serve and enjoy with your favorite chili toppings.

Final Thoughts

This is a wonderful meal that can be shared with a group of people and amaze them with the fact that it is made from pumpkin. The low fat level is also a plus! You can chow down with no regrets with this dish. So, enjoy and stay warm in the upcoming season!
